Try the seared king scallops with sous vide foie gras, port caviar, lemon and baby spinach leaves with a balsamic reduction or the roast Australian spring chicken with heirloom carrots, truffle chestnut, pickled lotus root and Masala sauce. For sharing there is the Hervey Bay seafood pot with saffron cream and garlic toasts or the char-grilled Wagyu tomahawk steak with truffle beef sauce.
